I'd probably scratch Ko Chang off your list. The other options have nonstop flights to/from Chiang Mai. Ko Chang will require a flight then a bus ride. It will eat up an entire day just for travel in each direction.
Any specific thing drawing you to Chiang Mai?
I was interested in some historic/cultural sites and some activities away from busy Bangkok. Chiang Mai seemed to be the most relevant. Any other suggestions?
