Sadly not; the voucher holder would has to travel on the same booking the voucher is used; so two bookings are a no go.

I think you might be in for a surprise. In summer you get the A380 making an appearance on this route, as well as the new A350. The latter aircraft has the new business seat which so far has yielded positive reviews.
As for availability, having checked BA redemption finder, every day in August has (at least) 4 club seats available there and back. Sounds too good right? Well, in August this route and many others are holiday maker heavy and business traveller light. So business is quiet but WTP will be busy. Good news here again though, for now, 4 seats there and back in WTP each way. So let’s assume WTP out and back (awesome on the day flight coming back too).
What would I do? Option four
Two dates where a seven day break is cheapest:
1) out and back in WTP: £3,604.
2) Out in WTP, return in J is £5,200.
3) With Avios out and back in WTP: 160,000/104,000 Avios (Peak/Off Peak) + £1926
4) Out in WTP off peak and back in Peak J, 154,000 Avios and £2326.
You’re getting a substantial saving with the Avios! But again, up to you if you’re cash rich/cash poor.
