A recent discovery that my local wine shop introduced me to is Sanger Voyage 360' Non Dosé NV. This champagne is produced by students at the Avize school under supervision of master producers who teach people how to make Champagne. I was worried about something made by students at first, but now it's really my favorite. It is, IMO, excellent, and is $40 per bottle.

Billecart-Salmon NV Brut Réserve as well as their Brut Rosé, which are both in the $50 range (depending on where you buy).
