The details behind how all of that happened haven't been given so it's hard to really form an opinion one way or the other. Though I would still side with the OP, cancelling a flight last minute like that is in pretty poor form. Even if she no longer wanted to be in a relationship, they could have gone as friends and enjoyed Hawaii.
As someone who has traveled under the cloud of an impending breakup there is no "going as friends". There is only "going as people with some serious grudges to be worked out in forced proximity". And doing so in Hawaii adds "at high expense, which neither of you will want to pay, adding to grievances."
Either go solo or don't go at all. But meandering through a formerly-romantic trip with a formerly-romantic partner is only good for your future memoir or screenplay.
