Have you tried calling Hyatt or messaging their Twitter concierge team? Sometimes the award night availability just doesn't show on the site. If they still can't book it, I've had good luck with making a points booking for 3 nights, asking the concierge to apply the free night cert to one of the nights, and shortening the reservation to just that night. Of course, YMMV.
Yeah tried calling Hyatt and they were the ones to tell me about the 3 night minimum when using points/free night awards. Apparently there are other Hyatt hotels that do this tricky minimum stay thing as well. I’ll try booking the 3 nights with points plan as you said and see what happens. Just a little maddening that we have to jump through hoops for some hotels just to use the cat 1-4 award.
