I don't believe visiting an underwater restaurant is going to be possible...(unless you're willing to spend $$$$$$ for private transfers).

You're correct that seaplane is only daytime hours, so you will be at the airport fairly early. You could consider a trip into Male, or maybe a visit to the airport hotel, which has a half decent restaurant (with alcohol if that matters) and is only a few minutes away from the airport by car.
