The outbound TWOV is probably 50/50. We've heard stories before where a family has been split with one allowed to enter (to collect bags) and the other spouse + kids not allowed entry.
The return leg is different in a couple of ways, different airport and different entry permit (144 hours rather than just a couple). The Turkish stamp should be explanable (presume it was a tourist/holiday?). And you'll likely be just fine.
Thanks for your help, the Turkish stamp was for 3 days in 2019 where I was in turkey on business. I was considering taking some copies of the email correspondence relating to this trip if I end up travelling on that passport. Not sure if it would make any difference although some of the stories online indicates that people have been let through having explained the visit.
With regards to the 1st leg I am working on the assumption we will get boarding passes for the second flight when we check in at LGW, but I have not been able to confirm this yet. I might be able to check in online for this flight before we leave the uk and print the boarding passes out at home.
I think my biggest issue is that it seems to be unknown as to the outcome up to the point of arrival in China, so my feeling is that as long as I do as much as I can to minimise the chance of denial of entry, there is not much else I can do.
If we can get through PVG successfully on the way out I would be more accepting an issue at PEK (although I am obviously not seeking any issues) because at least we would have had the Japan part of the holiday and would on our way back home anyway.
