I really enjoyed this meal. It was delightfully gluten free. The terrible disgusting GF meal catered on the previous connecting flight was inedible. Boiled chicken? Really just why is this necessary? The banana chocolate mousse on the regular menu was also GF and delicious. Why can't BA just offer one option each flight that is gluten free? Offering a Business or First customer who is celiac unadorned boiled chicken as their only GF meal option is not good for business. There are a lot more of us getting diagnosed with celiac every day.
But what if BA (or any airline for that matter) just offered an option that was GF on every flight? There's no guarantee it wouldn't be unadorned boiled chicken. Really what you want is a choice and that should be by being able to pre-book from a selection of GF choices. This means the airline needs to be able to publish menus in advance and offer them from out stations as well as home base. It also requires the passenger with dietary needs to be proactive and log in and make those choices. Yes, if you book too late or forget, you are going to get stuck with what ever is available on the day, but that's no different from today.

Ideally everyone should be able to go in and choose their preferred meal from a list before flying. Then they would know how many to cater for of each dish. Imagine no longer having to be asked if you want chicken of fish and just presented with your selection. They could even print it on your boarding pass so you don't forget what you ordered!! This would save time, especially in economy where they could look down a sheet and know its Chicken, Pasta, Pasta, Beef, Chicken Beef etc as they went down the cabin, This would increase passenger satisfaction and reduce waste,
