I don't ski that regularly, but when I was doing one 1 week trip/year (a conference at a ski resort) I decided it was best to own my own boots but rent skis. I generally rent the "performance" package where you get nicer skis that are usually better maintained than the cheapest package. My experience (though it's been a few years) was that you could go in and swap for a different model any time, so if you wanted an all mountain ski one day and a better bump or powder ski another day, it was just a matter of going in for a few minutes to swap them and get the tension & length set on the new pair then you're out the door with them.
