It is all one ticket so I am protected, but the next direct flight to SF is 1hr45 later and gets me there beyond a reasonable dinner time!

A 1:25 connection obviously doesn't leave much room for error, but even with checked bags is still perfectly do-able at JFK. JFK T8 as a whole isn't near as busy as it used to be, AA has cut tons of flights, and January in general is not a busy month at all for flying.

Personally I wouldn't worry and just go with it, you'll know well in advance of your dinner reservation (either in HEL or JFK) if things were to look dicey so could hopefully reschedule or shuffle things around with plenty of notice.
