EWR-BOM / EWR-DEL have been two of the toughest upgrade routes in the system for years. (They were widely reported to be two of pmCO's most profitable routes). If you weren't on GS instruments, your chances would be nearly nil.
Space generally opens approximately one booking class at a time -- so it'd go from J9 JN9 C9 D0 to maybe J9 ... C9 D5 Z0, then J9...C9 D9 Z4 ZN0, then J9...D9 Z9 ZN0, then J9...Z9 ZN2 P1 PN0, etc. On GS instruments, you need PN >= 2.

Saturday is generally approximately as difficult as Friday.
Since you mention seats "next to each other," but you seem familiar with the layout of the Polaris cabin, I take it you mean something like a window and nearby aisle, or two adjacent windows (only one of which is actually near the window, obviously). IME, this is going to be a tough ask, as the odd-numbered rows tend to fill up first.
