Indeed, when I get a meal on, e.g., an 11:30 pm international flight, I tend to find it a bit ridiculous, because of course I've eaten dinner before getting on the flight and so has everyone else on board. I might cut it off a little later than 8pm- I might say 9:30pm or something- but there's definitely a point at which the likelihood that everyone on the plane has already eaten is extremely high, and there's no reason to serve dinner.

I recall many times that for flights departing after 10:00 pm that I went to the airport hungry in order to eat at the lounge or at the aircraft and spend more time at the destination I am. Obviously, this happens when I travel in J and not in the USA.
And yes, for late-night US transcons an arrival breakfast would be appreciated by almost everyone.
