I really think a lot of what some travelers get upset at is the psychological impact of being asked to pay something. So if someone has eligible status or an eligible ticket, free, bad food at the UC > any paid restaurant, no matter how good.
One of the better meals I have seen in coach is the SAS pre-ordered meal. You pay like $30 and they deliver something really tasty and filling to your seat, rather than the standard coach longhaul meal. I suspect it would never work on US carriers- for many Americans, the idea of paying for something really nice when they can get something crappier for free is just psychological torment.
