Some flights do, in fact, have a lot of GS/1K passengers up front. The problem sometimes with Polaris is that they might cater 3-4 choices, with a limited number of each. If your father opted for a choice that was popular that day with GS/1Ks as well as the first couple of rows of the cabin, yes, the galley might have been depleted of that choice.
