There is some crazy things available on QF for sure. Was wondering last year when I was trying to find the PER-AKL nonstop.

Was able to get ANC-SEA-LAX-MEL(day visit)-AKL(overnight, 23 hrs)-SYD to work

for 2 pax in F (J to/from AKL).

But yes, best to book what you can TPAC and make changes as needed (hopefully space can be found- the OP is quite flexible in dates it seems).
