I'm Burning Miles: Looking for Value & Seeking Advice (Maybe New Zealand?)

I have searched on AS for award travel (business or first). I can see flights that get me to New Zealand. Some of those routes stop in Tahiti, Sydney, or Dubai.

How can I create a stopover on any of those routes on Fiji, Qantas, or Emirates?

Any recommended routing to have a stop over en route from SFO, LAX, EWR. or PHL?

My travel partner and I are footloose. I am looking for a good deal for a 3 week vacation sometime between Feb 16 and April 16

We have interest in being in New Zealand and any of the stopover places as well as Japan and other destinations are interesting too.
