I don't see airlines changing their method of distributing drinks whether complimentary or not. It's just too much of hassle to have drinks pre-ordered and filled. Yes the carts can be a PITA when one wants to get to the lav (and then causes a line afterwards) but I don't see that changing. Southwest doesn't use carts, not sure if any other US airlines hand serve like WN.
