What's with these Extra Person Fees I'm starting to see on various bookings?

For a 4-night stay I was looking at recently, adding a 3rd adult on the reservation added a whopping $500 which was not displayed as part of the room rate (only visible when clicking through and attempting to book) -- so either $1600 if booking for two adults, or $2100 for three. What gives?
