My understanding is that QF is rather paranoid about violating cabotage rules on their fifth freedom flights in the US, so if OP wants a
stopover in LAX, instead of just the straight onward flight on QF within 24 hours, they need to use AS not QF.

The point that was mentioned above is AS partner awards are
one partner + AS on an award. You can't fly CX HKG-CHC and then add QF. In fact, AS doesn't allow NZ-AU or v.v. as an award
at all so you can't even do CX HKG-NZ and then add a
second QF award NZ-AU in lieu of a stopover (QF is only allowed as NA-Australia, Australia-NA and intra-Australia). OP's proposed itinerary of HKG-CHC-MEL is not allowed as an AS award in any way, shape or form, and neither HKG-MEL nor CHC-MEL on QF is bookable as part of an award on AS.
