If you're in splurge territory even once, then definitely look at Le Neuvième Art in Lyon (link). It's 2 Michelin star and is not cheap, but I thought it was outstanding. Easily better than some of the more hallowed halls of gastronomy (Bocuse, Mere Brazier etc.)
