As per the rest of Australia if you like to drink there’s plenty of good places to go (moreso on weekends) - but for night time activities that don't involve alcohol or food - you might be out of luck. It’s not really a touristy city to be honest, although it might give you a better reflection of Australia if you spend your time in Sydney in the tourist areas - think Vancouver vs Edmonton.
As for the airport precinct itself - no, there’s nothing there at all. The airport is very spread out so there is nothing in the immediate vicinity other than hotels and a shopping precinct (at the Novotel as I mentioned above).
