I kind of agree with the OP.
Usually the veg option on an airplane is some bland pasta dish with very basic sauce, almost like an afterthought.
EK might be an exception as they get a lot of India-origin traffic and can make a decent Indian-style veg dish more appealing than the non-veg.
I'm a meat eater but it's true that past year or so I've been cutting down on animal protein, and red meat in particular, for health reasons. A lot of people my age (mid-20s) are very health conscious and bring their own snacks, drink water, and even don't eat everything on board. A lot of people might have a steak, say, once a month as a treat. Would you waste that free meal on airplane food (especially if you are a frequent traveler)?
