Exactly my thoughts. Every US flight has a third usually Indian veg option standard on the menu likely due to the volume that were being requested for these flights to the point where they even announce that if you ordered a veg meal, it is part of the standard offering. I think EK would respond and change menus if more people requested veg meals but maybe to them the data doesn't support the demand so why change on other routes? Also, flip side; when you have the non veg options run out and then you have the people who wanted a meat dish not getting one and grumbling about having to eat the veg option. Also, I find that the veg option on airlines is often a pasta dish (6/10 times penne with some tomato sauce which I would barely eat on the ground never mind in the air) which is usually not well made, so I avoid them if possible.
I fall into the camp of if you want a veg or non-veg meal guaranteed, then special order one. Otherwise accept you may have to deal with food that is not your preference.
