Some airports in China only permit standard card stock boarding passes, which I'm guessing the Apple app doesn't support.

Only some airline pairs work for air side transit. Even when this is not the case, as I noted up thread, it doesn't take more than an hour to get from inbound airplane to the checkin counter for your next flight by t-60.
