Using Google Flights, it looks like the JFK-LAS nonstop runs through Dec. 17, picks back up for a few days Jan 3-6 (CES maybe?), and resumes full time on Feb. 13.

Most likely a combo of JFK reductions and typical winter schedule slowdowns.
Thank you, As I have traveled around this date (typically right at end of CES) for at least 10 years, this is the first time I can recall that there wasn't at least one non stop.
