Your itinerary for TWOV purposes will be FRA-PEK-HKG.
At check-in at LCY you will advise you will be using TWOV and your next destination is HKG in four days. You will present your ticket to HKG and this will be entered into the system
On arrival at PEK immigration you will show your onward ticket to HKG only.
There are no issues with 'nested' tickets in this manner. Chinese immigration only care that you will be leaving within the TWOV period, to a third country (or immigration control zone).
