There are three different catering trolley types in aviation, they are not interchangeable. ATLAS (most common), KSSU and ACE (BA) With the mix of aircraft at Gatwick it is quite possible your aircraft was changed from an aircraft with one catering setup to another and as said the carts do not interchange, which could be a reason why there was no catering. It takes a while to change the carts over as it’s not a simple swap-over unfortunately.
I have never given much thought to trolleys prior to this thread. I checked the Wikipedia article, it is a tad sparse. But for those interested in this sort of thing, page 6 of this document shows how galleys must be configured to accommodate n number of trolleys.
