There are plenty of good food and drink options in T5, I usually arrive with a 30 minute pre-boarding time buffer and grab a quick bite.
There is dedicated check-in (To the left of the security line near the bag drop) but no dedicated security line, I believe you get Even More Speed which is a slight help. Stick with the PreCheck line.
I'd worry more about the traffic getting out to JFK during rush hour than the curbside->airside wait.
