Starting at the Hyatt in San Diego going to the Aviara in Carlsbad and then up to Huntington Beach in Orange county makes a lot more sense you're going from South to North. Indian Wells is kind of out of the way of all the hotels that you mentioned.

Not sure what you want to do with your child but Legoland in Carlsbad is really nice for kids of all ages.
