The difference between SFO-EWR and SFO-JFK is the network effect of having hubs on both ends, so there's virtually limitless demand in either direction. A large premium cabin is key, and it's available on most prime frequencies (28 seats and up) but there's also a massive Y market that feeds connecting flights on either coast, so low-density configurations with small Y cabins effectively leave money on the table.
I think if the opportunity cost of operating widebodies on virtually every SFO-EWR frequency were right, they'd do it.
