You can do in-town check-in on the way out and take the train without lugging your luggage around.

Also, if you're lugging your luggage through the airport, the airport express literally picks up from the arrival hall, and the taxi stand in both Kowloon and HK station is directly across from the train arrival platform. You're looking at maybe 200m of extra distance dragging your luggage from taking the train.

Would strongly consider train + taxi vs. a car service from the airport.
