I have a feeling the Japanese:American ratio on JAL would vary greatly depending on the route (and season). My few experiences US<-(NY-NRT) were the vast majority appeared asian (but you never know). I believe they offer some continuing service to Asia, which might affect passenger make-up.

JAL: Good food. (Japanese emphasis, but Western choice for main)
AA: No real complaints here either.
UA: Been awhile, but perhaps a small bit under AA? (Though that compares "UA then" with "AA now")

Entertainment edited: I think most (all?) of the flts I've taken have had a Japanese movie after the WEstern flick.
