What exactly is "snack service" in FC?

I've just returned from a r/t LGA-MCO trip in FC and I am very confused about the meal offerings. I do understand the meal window times and I also believe that AA serves a "snack" in FC on all flights more than two and a half hours. Since LGA-MCO and MCO-LGA are listed as 2 hours 31 minutes, I believe they are snack flights. Right?

Here's my experience:

My other half took the 8:50am LGA-MCO flight which falls in the breakfast window and had a choice of pancakes or an omelet.

I took the 11:30am LGA-MCO flight, outside the meal window, and had a nice sized turkey wrap with pasta salad with cheese and crackers. I forget what the other choice was.

We returned on the 3:05 flight MCO-LGA which was ultimately delayed until 4:45. But since the original departure time was 3:05, inbetween lunch and dinner, that should have been a snack. However, we had a choice of pretzels or almonds, which I believe was the same as the offerings in coach.

Shouldn't the return have been a snack flight also?
