It can varying by airline and there can be all sorts of exceptions. The system won’t let you book a flight that does not meet the MCT. And if a schedule change results in a connection less than MCT, you'd have to be rebooked.
I don’t believe you shared whether you and your family are US citizens, but as others have said, the mobile passport program can save a lot of time, though I don’t know how traveling with a young child may impact eligibility.
