The airside route for you means you need to clear UK and Ireland immigration as if you had arrived from (say) Paris. The landside route you don't need to do this, since you stay in the Common Travel Area. Whereas she is leaving the UK + Ireland so there is no passport check by the UK Border Force for her. Hence you are separated into different areas of T5 until you get through passport control. If you get a switched on Assistance person you can then get back together during the security check, otherwise you can meet her after security.
If you can persuade the Assistance staff to go landside then this isn't an issue but they may not understand the logic of doing that.
