Southwest has only one type of planes: various versions of the 737. That's it. So it's always one of those, no matter where you're going. Are they really that different from each other?

Since you're based near DEN, you may not have considered this, but isn't west coast - Hawaii not that much different in length from the LAX-BOS nonstop that Southwest has had for ages? Yes, it's over water, but in length terms isn't in roughly the same ballpark?

Anyway, unless you secure an exit row (an early boarding position helps) on Southwest, I'd say if you get Economy Plus extra legroom seats on United, it'll feel less cramped nonstop from DEN than it'll feel on Southwest from the slightly closer West Coast. But if you don't have any United status (the lowest level of which gets you into Economy Plus for free at check-in) and are not willing to pay for Economy Plus, then Southwest on a slightly shorter flight might feel less cramped.
