Yeah you can fly LH but then connect through FRA or MUC.

Not bad if you're coming from outside of Europe. But if you're in Italy or France say, do you want to fly through FRA to get to Malta? Or maybe AZ has some flights connecting through FCO but do you want to fly an Italian airline these days?
There are literally five other airlines with nonstop flights from Italy or France to Malta (Alitalia, Volotea, easyJet, Ryanair, Transavia). So there would indeed be a choice. That said, the flights are short and the airlines website is fairly clear. You can also Google "Air Malta trip report"
"proper service" is in the eye of the beholder.
Air Malta is not Qatar or Cathay. I'm not sure if you realize but a lot of European flag carriers don't give free food or bags anymore.
