IMO Amex is one of the tougher ones as generally gift cards don't count. Once you have used it as much as you can for your daily spend, especially within the bonus categories, you can always pay property or Q4 estimated taxes (even if you don't owe). It will cost about 2% but it is a safe way to meet SUB.
