It's one year from the date you booked.
In your situation, I would definitely just transfer the points. IMO the only really good reason for using it as cash is so you can earn towards status - it does not sound like that's going to be something that matters for you. With multiple passengers, points are vastly superior when it comes to making canceling and changing easily. Keeping track of significant credit for several people, with the expiration problem, isn't something I'd be interested in doing at all. You'll have to do that anyway for all the $5.60 fees for points redemptions, but that's a lot less to lose if you don't end up using it as soon s you expect.
