You said it yourself in your original post: seat maps really have no useful correlation to availability, whether for a booking class used for cash tickets, for a booking class used for award tickets, or for upgrades whose appearance may bear no relationship to published availability in any booking class. So looking at which seats are free on which sector will probably tell you nothing about whether QF will upgrade anyone who's booked the through journey. After all, if QF wants to upgrade someone LHR-SYD, they might just move someone else on one sector to give the upgraded passenger the same seat on both sectors. So looking at seat maps isn't very informative; you'd probably do as well trying to read tea leaves.
