They won't close the door until T-15 if they're still waiting for anyone, so that means it took you 40 minutes? TBH that sounds a little more FOTSG than FF.
I'm not saying it's easy if you don't have NEXUS or don't know what you're doing, but 55 is easily enough time for me to visit the TB MLL.
Yes, you are correct that the gate closed T-15. The flight was at the gate 2 minutes after the official arrival time. Probably about 5 minutes till the doors finally opened so I was down to about 30 mins. The walk gate 3 to C74 is not the longest distance you can cover at YUL but certainly not what I would consider a short walk. And even though I have Global Entry that does not help with Canadian security because they want to see you GE card which you don't get as a non-US citizen, it certainly helps once you get to immigration.
There was a line at both security and immigration but nothing I would consider outstanding or crazy.
I am not saying that this connection is impossible but I am definitely surprised that AC considers that a normal connection, particularly assuming that it can be significantly more busy. Had I not run I would not have made it.

Nothing wrong with plan B. This is exactly what I thought. Let's give it a try and see.
