I'm well aware of how it usually works here (as noted by the location in my profile). My point is more that there's nothing inherently preventing the restaurant payment process in the US from changing
if restaurant owners want to. So far, most don't, and we can discuss for a long time as to exactly why (and have in the EMV/contactless threads).

Again, I haven't had contactless declined for regular purchases that don't involve anything remotely related to manufactured spend. MS is something that isn't sanctioned by issuers (and honestly, a fair number of stores too) given how often gift cards are used to cash out stolen credit and debit cards, so it's definitely a YMMV thing--which is why there's
a forum on FT about it. It sucks for those who aren't trying to commit fraud, though.
That said, I was getting prompts from cashiers for the last four digits of the virtual card for larger contactless purchases back when Apple Pay first came out, but those were more due to the lack of EMV/chip acceptance than anything related to distrust of contactless. And the last four digits is something easily accessible from the Wallet app if need be, which fortunately hasn't happened in quite a long time.
BTW, it sounds like it's not
too often that you're buying gift cards, so I imagine it's something that can be easily planned for if you ever decide to try using the various mobile wallets more someday.
