Some (possibly much or all) availability HKG-JP in that time frame is currently available as married segments only. You can book a married segment one-way journey from the US to Japan (through Hong Kong), then you might (or might not) be able to call in and change the US-HKG segment date to create a stopover in HKG while keeping the HKG-Japan segment. That's what I would try. Use Qantas search to identify the married segment flights US-Japan.
