For Pujol make sure you reserve the regular dining room, not the taco omakase. I did the omakase and regretted it. If you're gonna be in CDMX, I highly recommend Quintonil, I enjoyed it much more than Pujol.
+ another vote for Chef's Table and Ginza Onodera. Also recommend Ichimura at Uchu.
I agree that Ichimura is very good on balance (I have not been to his new place, but went multiple times when he was at Brushstroke). That said, I honestly got a bit tired of the triple-layered pieces of toro...I love fatty tuna, but sometimes enough is enough.
