You are always at risk from equipment change, so you could possibly get one of the refitted 747s on LAS now. But overall you are correct, you have a better chance of a newer seat out on LGW's fleet at the moment, not something I ever thought I would say - though even that isn't totally guaranteed. In your shoes I'd go LGW, accepting that it may end up different on the day.
