I am in Poland and Ukraine. I was never prompted for PIN except for one ticket machine - everything else it always goes to signature, regardless of whether it is contactless or chip insertion. I will be curious to hear if you or anyone else travels with it and has different experiences.
Interestingly enough, I tried my Polish MasterCard on Google Pay on a transaction over 50 PLN and it prompted for a PIN. American cards do not - tried both TD cards and Discover. So I guess use of CDCVM is also dependent on the issuer, too. I did, however, read on Polish forums/websites' comments that cards in Google Pay here require a PIN still but Apple Pay do not. Could it be that CDCVM is supported for Polish cards in Apple Pay but not Google Pay?
It's just hearsay, though.
Also, Polish MC allows transactions below 50 PLN to be done with a locked phone, whereas American cards do not. So also seems like issuer dependency.
