Many, many more times than I care to admit.
Until the reason for some of this behavior hit home to me, I too would think of taking revenge on my fellow pax. But I see now that few people probably choose to grab your seat back simply to aggravate us. It's very difficult to determine by physical appearance why someone may need to grab a seat back. Could be a balance problem, could be a knee or other joint problem, could be vertigo. Or it could be a much worse physical/mental problem as has been outlined here.
I've become much more mellow as the years go by and these things no longer aggravate me. I just shrug this behavior off nowadays and say a silent thanks that I'm still able to rise out of my seat without help.
Thank you for your kindness and thoughtfulness, Cholula. Wish every passenger sitting in front of my mother, who has problem walking and needs to grab on anything to painstakingly stand up, is as considerate and understanding as you.
