In a few months, I will be travelling to Ho Chi Minh City from DC via Beijing. All flights are on Air China and were booked through the Air China website. My connection time on the way to Vietnam is 2 hr 30 min, and on the way back it's only 1 hr 10 min. From my understanding, 60 min is the MCT for International-International connections. However, if I do miss my connection due to delays on the first leg, will Air China automatically put me on the next flight? How does that process typically work in China? I do have a valid Chinese Visa (US Citizen) so even staying overnight in Beijing would not be a particularly bad option (on the way back).

A really key bit of missing info is whether this is on a single ticket. If it is, you should be protected. The 1h10 transit is tight but look out for the option via staff to queue jump if the transit security queues are long.
Remember that you are only permitted power banks up to 10000mAh in hand luggage in China.
