Grab is another option, might be easier than hunting down cabs at night. On grab, (foreign) credit card or cash works, can request taxi or private car
Do note that public transit is closed at night (~12-5am?), other than some night buses
Don Quixote orchard is open 24/7 if you want some Japanese stuff (they have a 24/7 tinyeatery at Changi jewel)
Gardens by the bay, outdoor garden open til 2am, though the attractions close much earlier (9pm)
A few hawker center stalls open 24/7 (most stalls would close by 1am), see if you can find one
