I think you're being a little hard on yourself.
The thing is, it's a common misconception that pricing works exactly like you stated: first they sell the K tickets, then they see the L tickets, etc. Reality is much more complicated, and the "X tickets at this price" message is really more of a sales tactic by UA than any attempt to convey actionable information -- it's the airline equivalent to "come down to Your Small Town's Ford dealership today before the deals are gone!"

No, that won't work. You'd need a P+ fare, not just a P+ seat assignment.
After looking at ITA Matrix, I can see that you're right; there's no good way to get from PBI to LHR on a P+ fare.
